Introduction: Tandoori Momos

The name "MOMO" is derived from the Tibetan word "Mog Mog".
Momos are basically dough wrapped with either stuffed Vegetables or Meat and are native from Tibetian region.
This has become a popular street food in India.
These can be cooked in various ways but the most common method is "Steaming"
Tandoori momos is another variation of Momos and can be a good party snack or starter.
Here steamed or fried Momos are dipped in a spicy yoghurt based Tandoori marinade which makes the Momos very flavourful.
These Momos can then be chared on direct flame, you can Bake / Grill or you can also shallow fry on pan directly.

Supplies

  • Two cups finely chopped cabbage
  • One grated carrot
  • One chopped onion
  • One and half cup All purpose flour
  • Salt as per taste
  • Pepper powder
  • Half cup of yoghurt
  • One tsp Red chilli powder
  • One tsp coriander powder
  • Half tsp Garam masala powder
  • Chat masala powder
  • Pinch of turmeric powder
  • One tsp Ginger garlic paste
  • One tbsp Chick pea flour(Besan)
  • Chopped Coriander leaves
  • Half tsp crushed methi (dry fenugreek leaves)
  • Skewer sticks
  • Cooking oil

Step 1: Preparing Vegetable Stuffing

Take a wide pan and little oil. When oil is heated add one finely chopped onion and saute for few minutes.

Step 2: Add Chopped Cabbage and Grated Carrot

Add two cups of finely chopped Cabbage and one grated Carrot.
Saute until they are cooked.

Step 3: Add Pepper Powder and Salt

When vegetables are cooked add Pepper powder and Salt as per taste.
Finally add chopped coriander leaves.
Stuffing is ready.

Step 4: Preparing Dough

Take about One and half cup All purpose flour in a bowl. Add a pinch of salt and give a mix.

Step 5: Make a Soft Dough

Add water little by little and make a soft dough.

Step 6: Add Teaspoon Oil and Knead

At last add teaspoon oil and Knead the dough.

Step 7: Flatten the Dough

Now take small portion of the dough and flatten it using rolling pin

Step 8: Place the Filling in the Center

Place the vegetable filling in the center of the flattened dough.

Step 9: Make Momos

Start Pleating by bringing edges together to form momo shape.

Step 10: Make All Momos

Repeat the same procedure and make Momos with the remaining portion of the dough

Step 11: Two Methods of Cooking Momos

We Can either Steam the momos or we can deep fry them.
I used both methods for making tandoori momos. You can use any single method.
I have steamed half of the prepared momos and remaining were deep fried.

Step 12: First Method: Steam the Momos

I have steamed the momos using my idli cooker. You can steam them by placing water in a vessel. Place the momos on a colander. Place the colander on top of vessel and steam them.

Step 13: Second Method: Deep Frying Momos

Take oil in wok and deep fry the prepared momos.
( You can use any one method steaming or frying)

Step 14: Making Tandoori Marinade

Take half cup yoghurt in a bowl and add Teaspoon Red chilli powder, Teaspoon Coriander powder

Step 15: Add Remaining Spices

Next add pinch of turmeric powder, Teaspoon Ginger garlic paste and Half a teaspoon Garam masala powder

Step 16: Add Remaining Ingredients:

Add Half a teaspoon kasoori methi ( dry fengreek leaves) ,One tablespoon Chick pea flour ( besan) and give a mix.

Step 17: Add Pinch of Salt

Add very little salt and give a mix.

Step 18: Add Steamed or Fried Momos to Marinade

Now add prepared steamed or deep fried momos to the marinade and mix.

Step 19: Attach to Skewers

Attach the marinade momos to skewers.

Step 20: Char on Direct Flame

Char on direct flame by rotating it.
Place mesh on the flame and keep rotating skewer slowly until momos get charred.
( We can also bake or pan fry them by adding little oil)

Step 21: Tandoori Momos Are Ready

Tandoori momos are ready. Sprinkle some chat masala powder and serve them hot.
